Super Bowl Party - Guacamole

The Super Bowl Party is a great place to eat snacks and forget about your New Year's resolution to eat healthy.  This recipe is full of "good fat" so you don't have to feel badly about it.  This makes enough for a big gathering.  This recipe is very "garlicky".  You can cut it in half if you want to cut down on the garlic taste (and smell). 

Ingredients:

2 Avocados
juice of 1/2 lime
1/4 cup red onion, small dice
1 garlic clove, finely diced or made into a paste
1 tsp salt
1/2 tomato, small dice
1 TBS fresh cilantro, chopped

Here's how:

Remove the avocado flesh from the skin.  Place it in a small bowl.  Cover it with the lime juice to prevent browning.

Cut the flash across into cubes and then use a spoon to remove it from the skin
Mash the avocado in the bowl with the back of a spoon.  Leave it as chunky or smooth as you like.

Either finely dice or make a paste out of the garlic.  To do this, roughly chop the garlic.  Top it with 1 tsp of salt.  Use the back of a knife to flatten the garlic until it looks like the photo below.

 Add the garlic paste or diced garlic and 1 tsp of salt to the bowl with the avocado and onion.

Add the diced tomato and cilantro to the avocado mixture and mix to combine.  Let the mixture sit in the fridge for at least an hour, covered in plastic wrap with the wrap touching the mixture. 


Done and ready to serve
 Serve with your favorite chips or use in a recipe.
