Christmas Dinner - Prime Rib Roast

Christmas dinner is something I do not like to make.  I find that after cooking for Thanksgiving, making thousands of cookies, shopping, decorating, and making Christmas breakfast, there is not much left in me for Christmas dinner.  Therefore, I try to make a simple dinner that is easy and requires little tending to.  A Prime Rib Roast is the perfect choice for this. 

Serves 10

Ingredients:

2 4-5 lb each boneless prime rib roasts
2 TBS Garlic powder
2 TBS Onion powder
2 TBS Italian Seasoning
2 TBS Olive oil

Here's how:

Preheat the oven to 500 degrees.

Place the meat into a roating pan.  Sprinkle 1 TBS garlic powder, garlic powder and Italian seasoning on each roast.  Use your hands to rub it in and make sure all the seasonings are evenly distributed.  This can be done the night or hours before if you wish.  Sprinkle each roast with 1 TBS olive oil.



Place the meat in the oven for 20 minutes.  Reduce the oven to 350 degrees and cook for one to one and a half hours depening on how you want your meat cooked.  Check the meat with a meat thermometer to determine the doneness you prefer. 

Once the meat is ten degrees less than your desired level of doneness, remove it from the oven, cover it with foil and let sit for 10-15 minutes.  It will come up to the perfect temperature and will be ready to slice.
