I made a recipe that called for 8 egg yolks, so, I was left with 8 egg whites and no ideas. After an Internet search, I found it - Angel Food Cake. Nothing is more classically known for egg whites than this cake. I took the recipe I found and substituted all organic ingredients. The batter was so good, I wanted to eat it and forget about the baking (except for that whole raw eggs thing.) Make this cake and serve it plain, with chocolate or your favorite fruit syrups. If you have 8 egg whites to use up, make this cake.
Ingredients:
1 c sifted cake flour
1 1/4 c organic sugar
8 large organic
egg whites
1 tsp organic cream of tartar
1/2 tsp salt
3/4 tsp organic vanilla
1/4 tsp organic almond extract
Here's how:
Preheat oven to 350 degrees.
Sift flour and 1/4 c sugar together 4 times.

In a mixer, beat egg whites, cream of tartar and salt until frothy throughout.

Add remaining sugar in small amounts and beat after each addition, stiff enough to hold a peak but not dry. Add flavorings.

Add 1/4 of flour at a time over mixture and fold in lightly. Be careful not to deflate the egg whites.

Pour into large ungreased tube pan; cut through batter with spatula to remove large air bubbles.

Bake 350º for 45 minutes.
Invert pan and let cake hang until cool.

Use a knife along the edge to ease the cake out of the pan. Makes 1 (9 inch) cake.

I will try this. I'm wondering if you can double the recipe and get a nice high cake like they usually look like.
