Tilapia for Dinner

I am not a fish eater.  I am sorry to those of you who are, but I am not.  However, I understand the health benefits of fish and wish I did like it.  I found fresh tilapia filets at Sam's Club that looked good to me for Sunday dinner.  There were 5 large filets for $13.50 and it seemed like a great deal.  One filet per person was plenty.  This recipe can be used for any other white fish.  It is so easy, that even I will make it.  The best part of it - the clean up.  This recipe is for 5 people, but can be added to or subtracted from as needed.

Ingredients:

5 large Tilapia filets
5 Tablespoons of softened butter or other buttery spread
2 small bell peppers or 1 large pepper, diced
1/2 large red onion, diced
2 1/2 lemons, cut in half
salt and pepper
5 pieces of large pieces of aluminum foil

Directions:

Preheat the oven to 350 degrees or heat the outdoor grill on medium heat.

Place the aluminum foil in a pile on the counter. 

Spread 1/2 Tablespoon of butter in the middle of the foil.  Place the fish in the middle on top of the butter.  Salt and pepper it on both sides.

Spread 1/2 tablespoon of butter on top of the fish.  Sprinkle 1/5 of the red onion and bell pepper on top of the fish. Squeeze 1/2 lemon on top.



Close the foil.  Make a tent packet out of it so that it is tightly sealed but the fish can steam inside.



Place the fish packets on a tray in the oven or directly onto the grill for 10-15 minutes (depending on the size of the fish). 

Cooked for 15 minutes. Ready to serve.
Remove, eat and enjoy.  Clean up by throwing away the foil!
