It's fall and nothing says more about this season than the flavors of pumpkin. This quick bread recipe is easy to make and have all the savory flavors of fall cooking. You can make this bread in your usual loaf pan or a decorative one, like I have (the pictures are shown below.) Serve this with coffee as a breakfast treat or even as a dessert.
Ingredients:
1 1/2 cups flour
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp ground ginger
1/4 tsp kosher salt
1/4 tsp freshly grated nutmeg
10 TBS unsalted butter, melted
1/2 cup brown sugar, packed
1 cup sugar
3 eggs
1 cup pumpkin puree
powdered sugar
Here's how:
Preheat the oven to 350 degrees F.
Grease your loaf pan using a non-stick spray.
Place the flour, baking soda, baking powder and spices in a medium sized bowl. Whisk together. Set aside.
In the bowl of your mixer, combine the butter and sugars. Beat for 2 minutes.
Add the eggs and pumpkin. Beat until combined for 2 to 3 minutes.
Add the flour mixture in two batches.
Pour the batter into the prepared pan.
Bake for 1 hour and 15 minutes to 1 hour and a half. It is done when a toothpick inserted into the middle comes out clean.
Remove from oven and cool. Top with powdered sugar and serve.
