Around here, no food oriented group gathering is complete without Sausage and Peppers. It is so easy to make and really good to eat. It has 4 simple ingredients and the oven does all the work.
I make mine with organic ingredients, but conventional tastes just as good. This is a great recipe to use frozen peppers for because you want the peppers to be soft.
This recipe can be made with pork, chicken or turkey sausage but I prefer the pork sausage because it has the most flavor and it's the original.
The following recipe was for a large party with 20 people. It can be made much smaller for just a few people. This can be put together in advance and place in the fridge or freezer until ready to cook. This recipe comes out perfectly every time.
Ingredients:
2 - 2.5 pounds of Sweet Italian Sausages, in the casing
4 Bell Peppers, any color you like
1 large onion
1 28 oz can of pureed tomatoes, or 2 pints of homemade
How to do it:
Place the sausage on a baking sheet and bake at 400 for 1 hours They should be browned on the outside. It is OK if the inside is still a bit pink because you will be cooking them more.
In the meantime, take out an aluminum foil half sheet size pan. Cut up the peppers into 2 inch long slices and place them in the pan.
Cut the onion into 1 inch long slices. Place them in the pan.
When the sausages are done, take them out and cut them into 1/2 inch wide slices. Place them in the pan.
Pour the tomotoes over the top. Mix until incorporated. It will appear a bit dry.
Cover with foil.
Bake at 350 for 1 hour to 1 1/2 hours. You want the meat to be cooked through and the veggies soft. While it is cooking the sausages, onions and peppers will let off a ton of juices and mix with the tomatoes to make sauce that is full of flavor.
Remove from oven and serve. This can be eaten as is, over rice or inside a hero (aka hoagie or sub) roll.
Tip:
This can be put together several days in advance of your gathering and cooked the day of.
