This recipe is a great recipe that has some great flavors. I take some bananas out the freezer, let them sit in a bowl on the counter for 2 hours and then add that to the batter. This is inspired by Martha Stewart's recipe and should be tried.
Ingredients
Makes about 3 dozen
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon coarse salt
1/2 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1/2 cup mashed ripe banana (about 1 large)
1 cup old-fashioned rolled oats
1 cup chocolate chips
1/2 cup coarsely chopped walnuts
Here's how:
Preheat the oven to 350 degrees F.
Whisk together flours, salt, and baking soda in a small bowl and set aside.

Put the butter and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy.

Reduce to low speed. Add the egg and vanilla and mix to combine.

Mix in banana.

Add the flour mixture and mix until just combined.
Stir in oats, chocolate and walnuts.

Drop dough onto baking sheets using a 1 1/2 inch ice cream scoop.
Bake for 15-17 minutes.
Remove from the oven and let cool on cookie sheets for 5 minutes. Transfer to a wire rack and let cool completely.
