Fresh green beans are going to be coming up in the garden soon. They are also in the the farm stands and farmer's market too. If you are tired of bland limp beans, make this recipe.
Ingredients:
1 TBS extra virgin olive oil
5 cloves garlic, minced or pressed
2.5 lbs fresh green beans
1 tsp salt
1 tsp freshly ground pepper
1/4 cup chicken stock, homemade or organic preferred
Here's how:
Place oil and garlic into a saute pan. Saute for 1 minute.
Add the beans and cook on low- medium heat for 5 minutes, stirring to get the garlic and oil on the beans. Be careful not to burn the garlic.
Add the chicken stock and cover. Cook for 10 minutes.
Remove the cover, cook for 5 minutes more to evaporate a but more liquid.
Serve.
